Here's the best cheat day dinner we've ever had:
General Tso’s Chicken - (adapted from recipe #4523 on http://www.recipezaar.com/)
Makes 4 servings
Sauce:
¼ cup cornstarch
¼ cup water
¾ tsp fresh garlic, minced
¾ tsp fresh ginger, minced
3/8 cup sugar
¼ cup soy sauce
1/8 cup white vinegar
1 cup condensed chicken broth
Meat:
1 ½ lbs boneless skinless chicken, cut into chunks
1/8 cup soy sauce
1/2 tsp white pepper
1 egg, beaten
1/2 cup cornstarch1 cup green onions, sliced
3/4 tsp crushed red peppers (more or less depending on how spicy you like it.) (original recipe called for 8 small dried hot peppers, seeds removed)
Combine all ingredients for sauce in a quart jar with a lid and shake gently. Store in refrigerator until ready for use.
Mix chicken, soy sauce, and white pepper. Stir in egg. Add cornstarch and mix until chicken pieces are coated.Deep fry 7 or 8 pieces at a time in a 350 degree oil until chicken pieces are crispy. Drain on paper towels. Repeat until all chicken is fried. (Fried chicken can be kept warm and crisp in the oven on 200 degrees.)
Place a small amount of oil (1 Tbsp) in wok, and heat to 400 degrees (I just took ~1 Tbsp of the oil that I was frying with and put it in a fry pan instead of a wok).Add onions, peppers, and stir fry about 30 seconds. Stir sauce mixture, then add to wok. Cook until thick. If too thick, add water a little at a time until right consistency is reached.Add chicken to sauce in wok, and cook until hot and bubbly. (We left the sauce separate so you could choose between this sauce or a sweet & sour sauce.)Serve with fried or steamed rice.
